Hoje a pizza continua a evoluir. Segundo Alexandre pizzaiolo chef a preparação de uma boa pizza não é mistério pois leva apenas ingredientes básicos como farinha, água, sal marinho, azeite e uma mínima quantidade de fermento e cobertura fresca e de qualidade. O que a torna especial é a riqueza de detalhes acrescentados na preparação como por exemplo o descanso prolongado da massa e sua abertura na mão que a torna artesanal seguindo antigas tradições napolitanas. Até aqui você fez 50% de sua pizza . A outra metade está no modo dela ser forneada, como temperatura ideal do forno, posição do disco no lastro e tempo de forno para cada combinação de ingrediente.
